Slow Cooker Shredded Beef Tacos
Tender, juicy, and full of flavor ~ perfect for an easy taco night!

Ingredients

  • (2.5 - 3 lbs) Beef Chuck Roast
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • Seasonings to desired amount: chili powder, cumin, smoked paprika, oregano, salt & pepper
  • 1 cup CDF Beef Broth
  • Optional: fire-roasted tomatoes from can OR salsa
  • Optional: juice of one lime and/or 1-2 chipotle peppers in adobo, chopped

Directions

1) Sear the roast in a hot skillet for a few minutes on each side (optional, but adds flavor).

2) Place roast in the slow cooker. Add onions, garlic, spices, tomatoes or salsa, and broth

3) Cover and cook on low for 8–9 hours or high for 4–5 hours, until meat is very tender.

4) Remove the roast and shred it with two forks, discarding excess fat.

5) Return shredded beef to the slow cooker juices and stir in optional lime juice or chipotle if using.

6) Serve in warm tortillas with toppings of your choice.

    Topping Suggestions:

    • Shredded lettuce or cabbage
    • Chopped onions and cilantro
    • Avocado or guacamole
    • Crumbled queso fresco or shredded cheese
    • Pickled red onions
    • Sour cream, Mexican crema, or coconut cream
    • Fresh lime wedges!
