Shepherd's Pie
Who doesn't love the comfort and warmth of Shepherd's Pie? This one-pan meal is equally delicious when made with our flavorful lamb OR beef! This is a great recipe to double.

Ingredients

  • 1 lb Ground Lamb or Ground Beef
  • 1 lg onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 1 cup peas
  • 1 cup beef or lamb broth
  • 1 Tbsp tomato paste
  • 2 Tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp flour (oat flour for gf)
  • Salt and pepper, to taste
  • Optional: 1-3 tsp dijon mustard
  • 2-3 lbs Yukon gold potatoes or other

Directions

1 - Prepare mashed potatoes, stirring in cream, butter, or coconut cream, if desired. Set aside while preparing filling.

2 - Add ground lamb or beef to heated skillet and cook until browned. Add in chopped onion, garlic, and carrots to the pan and sauté for 5-7 minutes, until veggies soften.

3 - Stir in tomato paste, Worcestershire sauce, dijon (optional), thyme, rosemary, salt & pepper to desire taste. 

4 - Sprinkle in flour, stirring to combine as it begins thickening.

5 - Pour in beef or lamb broth and stir. Simmer for a few minutes. Add in peas, and cook another few minutes. 

Preheat oven to 380°

6 - Spread filling evenly in 13X9 rectangular baking dish. Spoon mashed potatoes on top of the filling and bake (uncovered) for 25-30 minutes, until bubbly at edges. 

Let cool and serve! 

*Before putting in oven, sprinkle with paprika and/or add little dollops of butter.

*Add in other veggies or more of the same. Sometimes we double or 1½x the recipe for more filling. 

*Leftovers of this meal are wonderful to have for the next day!
